An entry in the newspaper BMDs columns makes it clear it was this Mary.

Notes - (Research):I think the Mary who was born Mary Pooley (and recorded as such at her baptism in Feb 1837) was the same Mary shown as Mary Jane Hambling and with her mother and ?father in the 1841, 1851 and 1861 censuses. The age given is consistent with this baptism (assuming Mary was baptised as a young baby as was the norm and no age was given - I believe it would be very rare for an age not to be given for a child who was not a baby). In addition, the age would have to be wrong if this Mary had died and John and Mary had then had another baby with the same name (again, assuming the baptism was of a young baby).
Since born before her parents married, was Mary the daughter of John? Given how soon the marriage occurred after her baptism I think it most likely. Maybe he was still an apprentice and so not allowed to marry when Mary became pregnant.
Certainly when she died John put an entry in the papers (Western Times) in which she is described as 'the daughter of Mr. John Hambling, tailor'.

Shows by banns, both signed, witnesses were John Tickell and Mary Whitell.
It seems probable that John and Mary would have had one or more other children between Elizabeth and Charles.
Sometime between Elizabeth's birth and the 1851 census the family seem to have moved from Kingsbridge / Dodbrooke (in Kingsbridge Reg District) to Tormoham (in Newton Abbot Reg District). I say "seem to have" because they could have moved from Kingsbridge / Dodbrooke to X and then later from X to Tormoham.
No child born and died in Kingsbridge RD during this period (or born Kingsbridge RD / died Newton Abbot RD); in Newton Abbot RD is a Sarah Ann Hambling, whose birth was registered in Dec Q 1847 (GRO ref vol 10 p.143) and whose death was registered in JUn Q 1848 (GRO ref vol 10 p.118) (there were a few other - not many - Hambling births in Newton Abbot RD at this period)
A possible child of theirs in Kingsbridge RD was a John who was born and died in 1840:

(there were a number of other Hamblings born around this time belonging to other families, many being children of John's brothers so it is far from certain that John was the son of John)

The middle name is similar to that recorded as the surname of a child with John and Mary in the 1841 census. However, the firstname is different, the age different (given as 3 in the census - but it could be that is should have said 3 mo or 3 wks). With so many differences I think there was probably no link between the 2.
