"[April] 16 No. 1542. Elizabeth, parents: Thomas & Ellen Simcock, abode: Vale Pleasant, father's occupation: Labourer, ceremony performed by: Do: [Thomas Yeoman]" - under heading 'Baptisms ... Stoke-upon Trent ... 1820'
Gender Female Residence 1861 1, North Cross Street, Fenton, Staffordshire, England - The census entry shows that Eliza was living with her 9 children, son-in-law Samuel, husband of Sarah, and her grandson John, in a house on the west side, going south, of North Cross Street.
Occupations were shown for five of the household, all employed in the pottery business though all with different roles. These five included both Samuel and Sarah, so caring for grandson John probably fell to Eliza, whose own youngest was only aged 3 so would also have needed her attention. Neither 7 year old John not 5 year old Thomas were shown as being at school, but 11 year old Eliza appears to have been between school and employment so probably helped her mother look after the household and younger children.
Died Jun Q 1882 Stoke on Trent Reg Dist, Staffordshire, England - Found in the 1861 census, but not in 1871 when her younger children are living with an older sibling, suggesting she had died by then, but may have been elsewhere, sick or remarried.
However, no likely marriage found on FreeBMD, and death there with closest fit on age is 1882. I have also found no other Elizabeth to fit this death.

Family John GOTHAM, b. Abt 1818, Stoke on Trent, Staffordshire, England , d. Mar Q 1858, Stoke on Trent Reg Dist, Staffordshire, England (Age ~ 40 years) Married 1838 St. Mary the Virgin Church, Bucknall, Staffordshire, England - This marriage seems to be missing from the GRO index (not found by searching for John as Gotham or Gothan, nor by searching for Elizabeth Simcock) but it is in the index to the local registers on the Staffordshire BMD website.
This shows (in the index for 1838):
GOTHAN [sic], John married SIMCOCK, Elizabeth at Bucknall, St Mary's Church, registers at Stoke-On-Trent, ref. 2/01/055
Other trees claim 12 Nov 1839 or 12 Nov 1838 in Bucknall Parish Church, Stoke-on-Trent. Looking at images of the PR on FMP I can't find this marriage, but the register is strange - the old style register was being used still, and whilst there were many registers in 1837, hardly any in 1838 or 1839, so it looks like another register may also have been in use.
